The only thing better than croissant is making your very own croissant breakfast boats, tailored to your preference. I love croissants. They’re buttery, crispy, and soft, all at the same time.
It doesn’t even matter if they are filled with something savory or sweet. A croissant, per se, is delicious enough to start your day with a smile.
In my book, this recipe for breakfast croissants is versatile. You can eat it freshly made or freeze it for later.

I think if you’re like me, who juggles work, family, friends, and hobbies, it will always be a challenge to come up with a delicious and easy breakfast daily.
Sometimes, it may be extra difficult to wake up after a long night, too. When this happened, it usually takes me ten snoozes before I finally get up and start my day.
When I wake up at 5:30 AM every weekday, I always make sure I make a type of breakfast that can give my family enough energy until lunchtime.
But for weekends, I love taking my time in the kitchen and make my croissant boats. If I do make more than I need, I freeze the extra croissant boats for the next morning.
When I get the chance to enjoy one alone, I pop a breakfast croissant in our toaster oven and enjoy it with my second or third cup of coffee.
As a busy family, we are always set on having eggs, bacon, and toast or just cereal for breakfast every single day. I know, I know. They’re not very healthy food choices.
That’s why I came up with this type of breakfast. These breakfast croissants have vegetables in them. It’s a complete and balanced breakfast package.
Whenever I create a new version of a recipe, I always try to combine dishes. In this breakfast dish, I managed to insert a casserole into a croissant boat.
The hearty sit-down dish turned into an on-the-go breakfast item. My husband and I have already eaten my croissant boats in the car and while walking to work.
I’ve also made these handy parcels for school and church bake sales. Everyone loved them the first time and often requested them since.
These breakfast croissant boats can have whatever filling your target eaters love. If your kids love cheese and meat, then, by all means, put a lot of these ingredients in your croissant.
Make it based on the occasion or the theme of the gathering. Be bold with flavors if you need to, especially if you want to impress a crowd.
What you need
A good croissant breakfast boat needs the freshest pre-made croissant store in your area. Look for multi-grain croissants that are either big or bite-size if you want to stick to the healthy breakfast theme.
Larger croissants usually have more egg mix in them than the small ones, so they tend to be fluffier and creamier.
However, if you have a picky eater in your group, you may want to use the smaller croissants to help that person appreciate a good croissant boat even in small bites.
For the eggs, you will need about 6 to 8. I, for one, love to load these croissant boats with fluffy eggs.
Just this ingredient alone will make your mouth water. It makes your breakfast feast something to anticipate during that weekend morning.
I love cheese, and whenever I have the excuse to add any cheese to my recipes, I do. In my book, cheese unites all the ingredients.
There is no right or wrong amount of cheese here. Choose the right one for those who will join you in enjoying the croissant boats.
If you want cheese varieties that go well with eggs, you can consider goat, gruyere, Swiss, white cheddar, mozzarella, feta, and sharp cheddar.
Customize your croissant boats
While other people love to eat meat in the morning, I don’t. Because of this, I have always made my croissant boats with more vegetables.
Let me give you other fillings you can try:
- Gruyere, mushroom, and caramelized onions
- Mozzarella, tomato, and basil
- Cheddar cheese and bacon
- Goat cheese, cherry tomatoes, and spinach
- Cheddar cheese, cooked sausage, and peppers
- White cheddar, mushrooms, and spinach
- Feta cheese, peppers, and onions
Make ahead and store them
Definitely! Go ahead and make these croissant boats, bake them, cool them, and then wrap them individually in freezer paper and pack them in Ziploc bags.
If you froze them, you should let them thaw in the refrigerator overnight first. This makes it easier and quicker to heat the following day in your toaster oven based on personal experience.
While you’re getting ready to leave in the morning, you can be confident that your croissant boats are already heating up in your oven at 250 to 300° F for about 8 to10 minutes.
To prepare for the entire week’s breakfast, you can make croissant boats on a Sunday evening. They can last for five days in your fridge.
Just put them in containers that are double-sealed with plastic wrap.
Every single day of the week, you and your family can have a quick and healthy breakfast. My family had more time preparing for the day before we left the house each morning.

- 6 eggs
- 3 tablespoon milk
- 1 cup cheddar cheese
- 8 slices bacon (chopped to bits)
- ½ cup scallions (or chive)
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Step by step instructions
1 Preheat oven at 375°F
Prep your Ingredients:
2 Cook the bacon until crisp. Place on a plate lined with a paper towel to drain excess oil. Cook the mushroom with the leftover bacon grease. Drain and set aside.
Prep the bread:
3 Cut down the middle of each croissant using a scissor or a knife. Set aside.
4 Line the baking sheet with parchment paper or spray some oil.
Prep the Egg Mixture:
5 In a separate bowl, whisk egg and milk together. Add the cheese, bacon, and scallions. Season to taste with salt and pepper.
6 Spoon the egg mixture into each boat trying to disperse evenly the mushroom, bacon, and scallions.
7 Loosely cover the top with aluminum foil to avoid the bread to easily get browned and crusty.
8 Bake at 375°F for 20 to 25 minutes or until the bread turned golden brown and the fillings are puffy and set in the center.
9 Cool the bread down a bit and serve warm.
